Slow roast beetroot with seared Chiltern pigeon breast, crème fraîche, barley and caraway oil

or

Slow roast beetroot with as above salt-baked celeriac instead of pigeon breast

Main

Roast Chiltern pork belly with roast apple, salt baked celeriac & fermented dill

or

Mushroom orzotto with toasted hazelnuts, dill ferment, & local hard cheese

Dessert

Pumpkin, orange and earl grey cream pudding. With cinnamon cream and rye crumb.
